Village Maid asked me in to capture the making. Not just the finished product sat on a board, but the whole process, and the people who are dedicated to producing world famous cheese.
Village Maid have been making cheese by hand for a very long time, and they go about it properly.
A small team who know exactly what they are doing, and a cabinet of World Cheese Awards to show for it.
The brief was simple. Come and document what actually happens at the dairy.
The curd, the moulds, and the hands doing the work.
The process from start to finish.
What impressed me most was how much of it relies on strict timing and the slightest of adjustments, all by hand, that make a huge impact on the finished product.
There may have been a bit of free cheese involved as well. How was I supposed to say no?
Thank you to the whole Village Maid team for letting me in, working around the camera all day and explaining the same thing twice when I asked. None of this happens without them.
